Food at Marenca follows the rhythm of the garden and the tide — vegetables picked before noon, fish brought up the coast road by mid-afternoon, bread pulled from embers while guests still hold their siesta.

Our kitchen operates from a vaulted stone room that predates the guest wings. A domed clay oven dominates the north wall; copper pans hang from hooks forged by a local blacksmith. Chef Emilia Varghese trained in Palermo and Chania before returning to recipes her grandmother wrote on flour-dusted cards.

Our cellar emphasises small producers from Sicily, Crete, and the Peloponnese — wines that complement grilled fish and tomato-rich stews without overpowering them. Service staff describe each bottle's origin and vintage; there is no automated recommendation engine or upselling script. Non-alcoholic options include house-made shrub syrups, bitter orange soda, and herbal infusions cooled in clay vessels.
